Retro Recipes: Meatloaf

Meatloaf_600.jpg
  • 2 lbs lean ground beef (you could also use ground turkey or plant-based meat)
  • 2 tsp chopped parsley
  • 1 cup Italian breadcrumbs
  • 1 tsp salt
  • 2 eggs
  • 1 tsp pepper
  • 1/2 onion, diced
  • 1/2 cup bbq sauce
  • 2 tsp garlic powder

For the topping:
  • 1/3 cup ketchup
  • 2 TBSP brown sugar
  • 1 tsp yellow mustard

Directions:

  1. Preheat oven to 350 degrees F. Line a baking sheet with foil and coat with non-stick spray, then set aside.
  2. In a large bowl combine the meatloaf ingredients and mix with clean hands, until fully combined. Press the meatloaf mixture into an 8″ x 4″ loaf on the prepared baking sheet.
  3. Bake for 45 minutes, then remove from oven and increase oven temperature to 400 degrees.
  4. Whisk together the topping ingredients, spread over the meatloaf and continue cooking for 10 to 15 minutes, until internal temperature reaches 160 degrees in center.
  5. Let meatloaf rest for about 5 to 10 minutes before slicing. Enjoy!
